Essentially, it is a self-basting casserole. The low wide base of the tagine holds the food and the conical lid constantly captures the condensation. Traditionally all ceramic, Le Creuset has improved on the original. The cast iron base allows their tagines to be used on any cooking surface, including induction cook tops. The cast iron also allows you to easily sear your meat or poultry prior to adding liquid. The conical top is still ceramic and beautifully glazed.
